When I was 17, I spent a few months in Miami Lakes, and then came back at 22. I worked at Shula’s Steak House for a bit, started culinary school, and honestly, it was a blast. I fell in love with Miami Lakes—such a vibe!
Fast forward to today, and it feels like about 50,000 New Yorkers and Californians have flooded the area (okay, maybe I'm exaggerating, but it’s definitely changed).
Back in the day, there was this Nicaraguan restaurant I’d go to, and all I’d order was the fried cheese. That was it. I’d devour that golden block of joy and be on my way. I have a serious love affair with cheese.
And also Honey Buns. Seriously, those two things are my food soulmates.
This recipe is inspired by La Placita, a stunning Puerto Rican spot in Miami owned by Chef Jose Mendin and actor Julian Gil. Sadly, the restaurant closed in 2022 due to some unfortunate events, but their fried cheese with guava sauce still haunts me in the best way possible. Those flavors? They’re unforgettable.

Fried Cheese w/Guava dipping sauce
16oz queso de freier,cut into 1/2 inch pieces
Neutral oil for frying
Scallions or chives as garnish.
Heat oil in a heavy-bottom saute pan on medium heat (350 F).
While the oil is heating, pat the cheese cubes dry with a paper towel. Make sure they are very dry, otherwise, you will have some splatter when frying.
In batches fry the cheese cubes until they are deep golden brown 30 to 60 seconds.
Land on a sheet tray lined with paper towels.
Guava Dipping Sauce
5 oz guava paste, cut into cubes
1/4 cup water
In a small sauce pot, add the guava paste pieces and water. Heat over medium-low heat.
Stirring constantly and adjusting the heat. (make sure it doesn’t burn).
Once the guava sauce comes together, turn off the heat and transfer to a serving bowl.
(you can use this sauce for ice cream, cheese cake, or waffles)
